I recently acquired some “Hen of the Woods,” or “Chicken of the Face” Mushroom as it was referred to throughout the night since we couldn’t didn’t want to recall the actual name. I had only heard good things about its cousin Chicken of the Woods so hoped the same would be true of this strange looking fungus. Following some tips, I simply sauteed the mushroom in oil and butter allowing the natural flavors to shine through. Unfortunately, I was left disappointed by the entirely tasteless mass.
At the high price this thing fetched, there must be something I did wrong. Does anyone have a fondness - and killer recipe - for this irregular growth?
